So what makes this Jalebi different? Well, it is made entirely with Khoya of course! Why is it available only on this particular day? Well, legend says, that’s it’s a treat for all those who brave the cold waters of the Ganga for their ritual bath. Treat for them, and treat for us all, we’d say!

HOW
Khoya Jalebi is a labour of love. To begin with, milk is simmered to thicken it and get the crumbly khoya consistency. Then, a generous amount of khameer or yeast is added and then ‘phetoed’ or churned gently, till both the ingredients are beautifully combined. Then, very little flour is added, just to bind it all together; the silken batter is dropped into spirals in piping hot ghee and fried till they are have a gorgeous hue on it. Dipped again into sugar syrup, and this delectable sweet is ready to be devoured! You can have it with some rabdi on the side!
