Santram Gupta used to sell dahi badas on his bicycle for Rs. 6 a plate, back in 1985. The hot-selling dahi badas are now sold at a roadside shanty near the General Post Office in Hazratganj, for Rs. 50 a plate. The dahi badas continue to be popular among Lucknowites. Here’s why: “We use less of urad ki daal and more moong ki dal, to make the badas light on the stomach,” says Santram. The dahi is made of hung curd, which is allowed to cool before they add cream to it to give it a smooth, creamy texture. But Santram won’t reveal the secret recipe of the chutney and masala, so no, you can’t get the exact taste if you try it at home.
