KALI GAJAR KA HALWA
Though it is christened as kali gajar halwa, the actual colour of the sweet is a lovely, deep purple. It tastes slightly different than the regular red carrot halwa. Top this halwa with a dollop of malai for extra taste.

JAUZI HALWA
Sprouted wheat is cooked with milk on simmer. Next in is sugar, saffron and the spices – mace, cardamom and nutmeg. A drizzle of kewra water is followed by a generous amount of desi ghee to bind the entire mixture together. And there you have, the Jauzi Halwa – a lesser known winter delicacy, available in Old Lucknow.

DESI ANDE KA HALWA

Similar to the jauzi halwa, this too has a wheat base, but is made of reduced or concentrated milk. One kg. of milk is reduced to get 200 grams of this dense, rich halwa. The halwa is called Habshi Halwa because of the dark color it acquires through roasting. Yes, very racist!

LAAL GAJAR KA HALWA
