You’ve heard of bun kebab, but bun mattar? Yes, we found a stall in Daliganj, Lucknow that serves delicious bun mattar.
Ramesh has been setting up his make shift Bun Mattar stall at the same spot since the last 50 years, and is quite a celebrity in the area. His speciality is the mattar ki tikki – he makes the tikki entirely of mattar. The safed mattar are boiled and mixed with homemade garam masala. Next, a generous amount of chopped onions and garlic are added, as well as heeng. The mixture is then shaped into a tikki, which then sizzles away on a hot tawa, in a pool of pure desi ghee. And there – the famous Bun Mattar is ready.
Ramesh also sells dried potato or sukhe aloo chaat, though people prefer the mattar tikki.
Ramesh is so passionate about his culinary skills that he has taught all the tricks of the trade to his sons, who are often seen helping him out at the stall during the busy hours.
